Move categories from the pair to each endpoint.

The categories created in #2 are bound to a pair definition - however, there is no reason why two participants in a paring shouldn't be able partition their data based on different categories. Hence the category ref data should be moved from the pair definition to each endpoint definition.
This issue is related to #151.

Configuration has been moved. The SortedMap usage also fell away as part of this bug, so #159 is resolved as well.

This looks good - I have but one question - in the case clause in the HibernateVersionCorrelationStore on line 183, why is the ListQueryConstraint not explicitly being matched on?
