Replace Mock Tests With Stub Tests

Where appropriate, we should implement a standard set of test stubs that we can re-use across unit tests where we don't want to verify behavior of dependencies (mainly because their behavior has been verified elsewhere). See the TODO in the DefaultSessionManagerTest.
