Error in example-diffa-config.xml

In doc/examples/example-diffa-config.xml, there is
an attribute match-timeout on the pair
node, when it should be matching-timeout.
Since there is a ticket #179 relating to validating the config, then rather than just fixing this error in isolation, maybe we should perform validation on this file to ensure it remains correct.
