Introduce strong data types for categories

Ticket #204 introduced the notion of a TypeDescriptor which served as pre-cursor for making category data types explicit (as opposed to string names).
We now need to build up a catalog of descriptors for well known data types and remove all case statements that are based on the string name - with the exception potentially of the code that reads and writes the config.
